Grandma Mary’s Foil Envelope Fish

  • Foil
  • ½ small green pepper sliced
  • ½ tomato sliced
  • 1 Green Onion chopped
  • ½ teaspoon chopped basil
  • Salt and pepper to taste (optional)
  • 1 fillet 6oz firm whitefish
  • 3-4 thin slices lemon

Cut foil into 12×6 rectangle
Place Green Pepper, Onion, and Tomato on lower half of foil
Sprinkle with ½ of your Basil, Salt, and Pepper
Place Fish on Vegetables
Sprinkle with remaining Basil, Salt and Pepper
Top with Lemon Slices
Fold upper half of foil over fish and veggies. Double fold edges of foil to make a tight ½ inch seal.
Place foil envelope on baking sheet
Bake in Preheated 450 degree oven for 15 minutes or until envelope puffs
